Custardless Goat Cheese Ice Cream Recipe with Fig Walnut Swirl

It's hard to say whether this recipe is for goat cheese ice cream or fig ice cream. Both ingredients share equal billing, their flavors blending deliciously as goat cheese and fig always do, this time for a result reminiscent of a quart (liter) of luscious frozen cheesecake.
Timing:
- Prep time - 20 minutes
- Chill time - 1/2 hr to 2 hours depending where you chill it. Do make sure it's as cold as it can get without freezing.
- Churn time - usually 25-40 minutes depending on your ice cream maker
- Freeze time - for best results, freeze another two hours before serving.
Substitutes
- The goat cheese in this recipe is fairly pronounced. If you're not sure you or your guests care for it, you can reduce the goat cheese and up the creme fraiche to taste, for example 1/2 cup goat cheese, 1 1/2 cup creme fraiche.
- You can easily use a fig walnut jam instead of making compote, or simply fig jam to which you add walnuts. This is especially practical when figs are out of season!

- This ice cream freezes a little harder than traditional custard ice creams do, so you might want to think to take it out of the refrigerator for a bit before scooping it out.

Instructions
- Melt honey in milk in a saucepan over medium heat. Careful not to boil over. Allow to cool a bit.
- Stir in fresh goat cheese, followed by creme fraiche. Chill thoroughly in refrigerator.
- Meanwhile, prepare fig & walnut compote. In a small sauce pan, combine figs, 2 T. honey, the walnuts and 1 teaspoon of water.
- Cook down until the figs have rendered some juice and are tender. Chill thoroughly.
- Freeze goat cheese mixture in ice cream maker according to manufacturer's instructions.
- When just done, add fig compote, or mix it in by hand for more of a swirl effect.
- Freeze two more hours before serving.
